 Vegetarian Pasta Marinara


I think maybe I have a problem. A problem with pasta that is! I may eat and make it a tad too much. What do you think? No? Ohh, that's a relief! I'm glad you like pasta as much as I apparently do. This dinner turned out really well. It's super fast and easy to do, and it's vegetarian! I'm always reading that it's good to have one no-meat meal at least once a week. I don't always succeed at this, but I try. If you find it difficult to convince your family that a dinner is still a dinner when it doesn't have meat, then this recipe may be for you! It uses beyond meat as the meat substitute so it looks like there's meat in there.... *whispers* but there isn't! Just maybe don't say anything to the family and see what happens! Let me know if they notice or not!

So, what do you need, you ask? Let's gather the ingredients. You will need your garlic salt, beyond meat(Sorry I took it out of the package before I thought to take a pic), olive oil, pasta of choice (I used Banza again and my daughter still noticed 😜), Rao's Marinara 4 cheese(any flavor or brand works though), and frozen spinach. I would recommend getting the frozen spinach in the bag to where it's looser and saves you time vs a brick of spinach like I did. 
 


Now, get your water boiling for the pasta and cook according to box instructions. In a separate skillet pour a little olive oil in there and heat on med-high. Once that's hot put in your "meat" and season with garlic salt. Cook 8-10 min. 

Next add in your spinach and sauce and bring to a simmer. Simmer for about 10 min. You can add any other seasonings you wish in here such as basil, Italian seasoning, crushed red pepper, or cheesy seasonings!
Drain your pasta and pour into the sauce. Sprinkle with Parmesan or fresh basil and plate!
