Sweet of the Week!
My recommendation for sweet of the week is:
Chocolate covered, peanut butter filled dates
Interested? Here's how to make them!
You'll need:
Pitted dates
Nut butter of choice-I used peanut butter
Dark chocolate chips
Chopped almonds
Salt
Cut a sliver in your dates. Just enough to be able to open it up a little. Like so,
Microwave your chocolate chips in 30 second increments till it's smooth and melted. Get a small spoon or butter knife and gather up some nut butter. Place nut butter in the sliver you cut in the dates then roll in the melted chocolate to cover completely. This is a messy part but I didn't mind it...
I may or may not have licked all of the chocolate off of my fingers.... and the spoon...maybe a little of the bowl... 😬
Place on parchment paper on a plate. Repeat till you've finished covering all dates. Sprinkle with chopped almonds and salt. This time around I also added shredded coconut.
Place in your freezer for about 30 min then transfer to the fridge. They can be stored in the fridge in a sealed container and are there when you get a craving for a sweet!
** Please note: from personal experience do not try to bite these straight out of the freezer... I did it so you don't have to. You'll break a tooth 🤭
