What's for Dinner?!- Vegetable Soup



If you've read my "Must Get Items at Trader Joe's", then you know I promised to share my own vegetable soup recipe with you all. This is fairly easy to put together. Granted, there is a lot of chopping involved. I did try to be smaht one time and put it in a food processor. Yeah, don't do that. It won't work. Again, I have messed up so you don't have to! They just ended up too small of pieces and it was a weird consistency... no bueno.

So get your cutting board and chefs knife ready and prepare your chopping hands! Let's get into it.

First you need the following:
Chicken broth, Red potatoes, celery, garlic, onions, carrots, zucchini, tomato paste, garlic, parsley, cilantro, and salt & pepper! 

Get your broth into a deep pot and set the heat to Med-high. Start cutting your red potatoes in 1 inch chunks. As long as all of the ingredients are bite-size don't worry about the shape too much. Add them into the pot.

Cut your celery in half lengthwise and then cut into half inch pieces-chop up the leaves and add them in there too! None will be the wiser. Do the same with your carrots and chop your onions in 1 inch chunks and add all of that to the pot.
                    



You can cover the pot to help it boil or bring it to a boil uncovered, either way is fine. This is a pretty foolproof recipe. While it's coming to a boil cut your zucchini in half lengthwise and then into 1 inch chunks, roughly chop your garlic- a couple of cool tricks I learned a long time ago with garlic is to put a knife flat on top of the garlic clove and then smash the garlic with one hit. It'll make getting the outer sleeve of the garlic way easier to peel off and it releases the aroma of the garlic as well. Don't like having garlicky smelling fingers after cutting garlic? Run a metal spoon under water and rub the spoon with your fingers-everywhere you have the smell, just rub on the spoon and your fingers will no longer smell like an Italian restaurant! It's MAGIC!

Anywho, chop your garlic and then chop your parsley and cilantro and once the soup starts boiling add it to the pot along with a can of tomato paste and stir it all up! Or have your little helper stir. 


It will turn a beautiful red color and you're almost done! Just let that simmer for about 15-20 min until all the veggies are soft. You can add a variety of toppings to this soup as well if you'd like! We like to add lime juice and avocado sometimes.
