 What's for Dinner?!

If there is one thing you must know about me, it's that I love reading cookbooks. My mom loves reading cookbooks, my grandma loves reading cookbooks, my.... well you get the point. It's hereditary. 😁 I have so many cookbooks in my possession. I can't walk through a grocery store, a bookstore, a library without looking at the cookbooks. I love looking at the beautiful photos of food. I love testing out the recipes and saving the ones that the whole family enjoys. Cookbooks just make me happy!

With that said, I checked out a cookbook at the library last week and I've been trying some recipes here and there. The cookbook is Magnolia Table, Volume 2 by Joanna Gaines. I own her first cookbook and really appreciate how she makes good, down to earth food. So this evening I'm going to try out one of her recipes in the second book. Chicken Florentine. 

I don't know that I've ever made Chicken Florentine so this will be a new one for my family to try. I'll let you know the verdict and if this will be put in my rotation of meals.


First you need to mince a shallot and garlic. I use another handy dandy tool to do the chopping of onions and garlic because I am always breaking down and crying, having to slowly chop away at onions. Now now, not literally crying y'all! Next, season your chicken with salt and pepper and dredge in some flour. Get your oil going and cook the chicken on both sides. Set aside!


Here's my chicken. Not perfect, but good enough. Don't you hate when you have that beautiful browning crunchy crust cooking away and then you go and mess it all up by not being patient or it sticking to the pan?! Me too,  me too. In the same pan add some butter and the shallots and garlic, cooking till soft. Then add in white cooking wine(about 1/2 cup) and scrape off the bits on the bottom of the pan(I had a lot of bits at the bottom of the pan because of my fail mentioned above). Cook for about 10 min, then add about 3/4cup of heavy cream. Can we just take a moment and all be grateful for heavy cream? I just love it! It makes such tasty sauces or you can whip it with a little sugar and vanilla and make a yummy whipped cream... it's just wonderful! Ok, back to the dinner, I'm getting off topic here. Simmer the sauce till it thickens.




Take off the heat and add in your spinach then slice chicken and place on top! And that's it. A quick, easy meal that's all done in one pan. I served ours with veggies and brown rice to soak up all that sauce.
Here's my end result. I'm no food photographer, but I hope to get better as I go.

Looks great and all but you want to know the verdict right? The whole family loved it! Squeeze some lemon all over everything and mix the rice in with that sauce and it is SO good!!
